These proteins are commonly found in mammalian milk, making up 80% of the proteins in cow milk and other dairy products made from cow’s milk. However, some research has shown that this type of protein has hidden dangers. Several people are allergic to casein.
A casein allergy occurs when your body’s immune system mistakenly thinks that the protein is harmful and inappropriately produces allergic (IgE) antibodies for protection. The interaction between these antibodies and the specific protein triggers the release of body chemicals such as histamine that cause symptoms which may include:
•Swelling of the lips, mouth, tongue, face, or throat
•Skin reactions such as hives, a rash, or red, itchy skin
•Nasal congestion, sneezing, runny nose, itchy eyes, coughing, or wheezing

Baking powder is a dry chemical leavening agent, a mixture of a carbonate or bicarbonate and a weak acid, and is used for increasing the volume and lightening the texture of baked goods. Baking powder works by releasing carbon dioxide gas into a batter or dough through an acid-base reaction, causing bubbles in the wet mixture to expand and thus leavening the mixture. It is used instead of yeast for end-products where fermentation flavors would be undesirable or where the batter lacks the elastic structure to hold gas bubbles for more than a few minutes, or for convenience. Because carbon dioxide is released at a faster rate through the acid-base reaction than through fermentation, breads made by chemical leavening are called quick breads.
Baking powders also include components to improve their consistency and stability. The two kind of acids in a baking powder can be either fast-acting or slow-acting. A fast-acting acid reacts in a wet mixture with baking soda at room temperature, and a slow-acting acid will not react until heated in an oven. Baking powders that contain both fast- and slow-acting acids are double acting. By providing a second rise in the oven, double-acting baking powders increase the reliability of baked goods by rendering the time elapsed between mixing and baking less critical, and this is the type most widely available to consumers today. At RealCake we believe that making a healthy cake is all about substitutions of certain ingredients like sugar, butter, oil and flour, as well as using less frosting or glaze.
Therefore we only use USDA Certified Organic Honey instead of chemically processed sugar. You must be wondering what is the difference between the two, to understand it better let me explain about it in detail. Our body use food as a fuel to run itself by breaking down food into glucose. The more complex a food the more work it takes to break it down.
Sugar is made of 50 percent glucose and 50 percent fructose and therefore it is broken down very easily, leading to a surge of blood glucose. What your body doesn’t use right away gets stored as fat.
Honey is only about 30 percent glucose and less than 40 percent fructose. And there are also about 20 other types of sugary substances in the mix making it much more complex, and dextrin, a type of starchy fiber.
