This is the reason, we do not use any milk products for making our delightful Casein Free cake. We always keep your long term health ahead of our financial gains.

Milk contains casein. Casein is the name for a family of related phosphoproteins. These proteins are commonly found in mammalian milk, making up 80% of the proteins in cow milk and other dairy products made from cow’s milk. However, some research has shown that this type of protein has hidden dangers. Several people are allergic to casein.

A casein allergy occurs when your body’s immune system mistakenly thinks that the protein is harmful and inappropriately produces allergic (IgE) antibodies for protection. The interaction between these antibodies and the specific protein triggers the release of body chemicals such as histamine that cause symptoms which may include:
•Swelling of the lips, mouth, tongue, face, or throat
•Skin reactions such as hives, a rash, or red, itchy skin
•Nasal congestion, sneezing, runny nose, itchy eyes, coughing, or wheezing

The most serious reaction to milk allergy is called anaphylaxis. This is a potentially life threatening reaction that can occur rapidly. Allergy to foods (including casein in milk) is believed to be the leading cause of anaphylaxis outside the hospital setting. People who have asthma in addition to a serious food allergy to an item, such as casein, are at greater risk for worse outcomes if they suffer an exposure and develop an anaphylactic reaction.

Symptoms such as swelling inside your mouth, chest pain, hives or difficulty breathing within minutes of consuming a milk product may mean you are experiencing an anaphylactic reaction and need emergency medical attention.

That is the reason we only sell Casein Free cake and lose some business as some of the customer we speak to want cake only with icing with cream.

Why we use Aluminium Free Baking Powder?

Baking powder is a dry chemical leavening agent, a mixture of a carbonate or bicarbonate and a weak acid, and is used for increasing the volume and lightening the texture of baked goods. Baking powder works by releasing carbon dioxide gas into a batter or dough through an acid-base reaction, causing bubbles in the wet mixture to expand and thus leavening the mixture. It is used instead of yeast for end-products where fermentation flavors would be undesirable or where the batter lacks the elastic structure to hold gas bubbles for more than a few minutes, or for convenience. Because carbon dioxide is released at a faster rate through the acid-base reaction than through fermentation, breads made by chemical leavening are called quick breads.

Baking powders also include components to improve their consistency and stability. The two kind of acids in a baking powder can be either fast-acting or slow-acting. A fast-acting acid reacts in a wet mixture with baking soda at room temperature, and a slow-acting acid will not react until heated in an oven. Baking powders that contain both fast- and slow-acting acids are double acting. By providing a second rise in the oven, double-acting baking powders increase the reliability of baked goods by rendering the time elapsed between mixing and baking less critical, and this is the type most widely available to consumers today. Double-acting baking powders work in two phases; once when cold, and once when hot. Common low-temperature acid salts include cream of tartar and monocalcium phosphate (also called calcium acid phosphate). High-temperature acid salts include sodium aluminium sulfate, sodium aluminum phosphate, and sodium acid pyrophosphate. Needless most of the Baking powders available in the market use aluminium salt as second agent.

Aluminum is a heavy metal and has been linked to Alzheimer’s disease or Parkinson’s disease therefore it is better to stay safe and not use such baking agents. Some people also vaguely notice metallic taste and as aluminium is not an essential mineral it is better to be avoided.

That is the reason we only use Arm and Hammer baking soda as it is 100% sodium bicarbonate and it is Aluminium Free Baking Powder.

At RealCake we believe that making a healthy cake is all about substitutions of certain ingredients like sugar, butter, oil and flour, as well as using less frosting or glaze.

Therefore we only use USDA Certified Organic Honey instead of chemically processed sugar. You must be wondering what is the difference between the two, to understand it better let me explain about it in detail. Our body use food as a fuel to run itself by breaking down food into glucose. The more complex a food the more work it takes to break it down.

Sugar is made of 50 percent glucose and 50 percent fructose and therefore it is broken down very easily, leading to a surge of blood glucose. What your body doesn’t use right away gets stored as fat.

Honey is only about 30 percent glucose and less than 40 percent fructose. Why we only use Cage Free Eggs?

Cage-free eggs are eggs from birds that are not raised in cages, but in floor systems usually in an open barn. The hens have bedding material such as pine shavings on the floor, and they are allowed perches and nest boxes to lay their eggs. Typically, cage free hens are healthier and have a more nutritious diet than hens that are kept in cages constantly.

We trust KEGGS Branded Cage Free eggs. Eggs from Keggs can be distinguished by their tan coloured shells, bright yellowish orange yolk and firm albumen. These eggs are produced by disease free, specially bred laying hens in the their hygienic farm facilities. The hens are housed in stress- free sanitary conditions on litter.
